Waffles in a waffle iron recipes

Delicious waffles in a waffle iron, the recipe for which is always stored in the nightstand with other culinary notes, can be prepared at any time. Take out the waffle iron and let's remember how to prepare this amazing dessert.

Thin waffles in a waffle iron

    Margarine – 1 pack (200 g).
    Flour – 1 cup (200 g).
    Sugar – 1 cup (200 g).
    Eggs – 4-5 pieces.

Such waffles are baked in a Soviet-era waffle iron, and this recipe is at least 25 years old. It has already been tested and retested, so don’t hesitate, but rather try it. So, let's start by grinding margarine and sugar into a homogeneous mixture. Why margarine? Yes, because with butter the waffles are not crispy enough, although this is a matter of taste. But this time we still take baker's table margarine.
When the mixture is ready, add the eggs, preferably one at a time, to make mixing easier. Slowly, after the eggs, add flour in a thin stream and mix well. The dough we get is liquid, but not so much that it flows down the edges when the waffle iron is tightly compressed (we press the top and bottom of the waffle iron wings). You need to pour the dough a little bit so that it doesn’t spill out onto your work surface around the edges.
And so, thin waffles are ready, while they are hot, roll them into tubes, and you can fill them with butter, custard, protein cream, or just ice cream. Serve with coffee.

Homemade waffles with mineral water and milk

    Milk – 1 glass (200 grams).

    Butter – 100 grams.
    Mineral water – 100 grams.
Sugar - to taste, from 50 to 100 grams.
    Eggs – 2 pieces.
    Baking powder – 0.5 teaspoon.
Salt is on the tip of the knife.
Vanilla sugar - to taste (1 sachet according to recipe).

Separate the whites from the yolks, in a separate large bowl mix the yolks with sugar, butter and salt, vanilla sugar. The sugar should melt, so take a mixer or mix everything by hand until smooth.
In another container, mix milk with baking powder and flour until smooth. Mix the contents of two plates, mix with a spoon, and then pour in mineral water and mix again.
Beat the whites well until they turn into a thick foam, add them to the dough and mix until the mixture becomes homogeneous. We bake thick and fluffy waffles and serve with honey and tea.

Homemade waffle cookies in a waffle iron

    Margarine – 1 package (200 g).
    Full-fat sour cream – 1.5 tablespoons.
    Sugar – 100-150 gr.

    Eggs – 3-4 pieces.

    Soda – 1 teaspoon.
    Vinegar - quench soda.
    Salt – 0.5 teaspoon.
    Lemon juice – 1 tablespoon.
    Powdered sugar – 2 tablespoons.
Cinnamon - on the tip of a knife, if desired.
And so, our homemade waffles can be made in the form of cookies. It's quite tasty, relatively simple, satisfying, flavorful, and anyway, who can say no to sugar wafers? It all starts as usual: we beat the yolks in a bowl with sugar and vanilla until the sugar is completely dissolved. The mass will eventually become fluffy. The margarine needs to be melted and cooled a little so that when adding it to the yolk-sugar mass, the eggs do not cook. Mix everything at medium speed, or by hand until smooth, at the end add sour cream and mix again for several minutes.
We extinguish the soda with vinegar, add a little lemon juice, pour it into the bowl with the dough, and mix. Sift the flour and add it in small portions to the mixture, stirring with a spoon. The dough for waffle cookies will not be as liquid as for pancakes, it will be a little thicker.
Grease the waffle iron with sunflower oil and bake the cookies for 2 minutes on each side. When the waffles are still hot, sprinkle them with cinnamon and powdered sugar and serve with tea and raspberry jam.

Beat the eggs with sugar until it is completely dissolved in the mass and stops crunching under the spoon. Melted butter, not hot, should be poured into the eggs and sugar and stirred. Add cream and sour cream, salt and vanilla sugar, lemon zest, mix everything thoroughly.
Sift the flour, add starch to it, mix with the dough. When the mass becomes homogeneous, add soda slaked with vinegar and mix. Sift the flour, add starch and soda, quenched with vinegar. Beat the egg whites until fluffy, and whip the cream separately. Mix the cream and protein foam, add to the butter and yolks, mix. Then slowly and gradually add flour and mix so that the dough is free of lumps. After 20-30 minutes, you can pour the dough into the waffle iron and make delicious waffles. Video recipe “Waffles in a waffle iron”

Waffles are a delicious dessert based on flour. Waffles can be crispy, soft, fluffy and thin, with the aroma of vanilla or rum. But no matter how you prepare them, this dish will in any case be eaten within the first minutes after serving.

Where did this dish come from? It is now difficult to determine the country of origin, but historians believe that it is a Chinese national dish, which was based on egg, flour and milk. Waffles came to the modern world from the Netherlands, and in the fifties of the last century a real “waffle boom” took place around the world. What does the word waffle mean? One theory suggests that it is the French word wafla, meaning "honeycomb". This is exactly the pattern the Americans chose for the press before they launched the waffles into mass production.

What to serve waffles with? This dessert is delicious both in its pure form and with sweet fillings. Top finished homemade waffles with condensed milk, jam, sour cream, whipped cream, jam and honey, and hot chocolate. While the dessert is hot, the waffles can be rolled into a tube or envelope, or you can let them cool in a round “classic” shape.

Homemade waffles - preparing food and utensils

The main products for making waffles at home are eggs, milk, flour, sugar. Some additives can make homemade waffles softer, while others can make them crispier and thinner.

How are waffles prepared? The process of creating a delicacy will be greatly facilitated by a waffle iron, but you can also make homemade waffles in a frying pan. In addition, not all components are basic - waffles can be prepared without eggs and without milk, this will be a more “light version” of the classic dessert for vegetarians.

    • 4 medium sized eggs
    • Sugar 200 grams
    • Butter 120 grams
    • Milk 2.5 cups

    4. Bake Viennese waffles by pouring a spoonful of batter into the middle of the waffle iron.

    Recipe 5: Belgian waffles

This is not to say that there is one exact recipe for Belgian waffles that needs to be followed exactly. In Belgium, various ingredients are used to prepare waffles, which significantly affect the taste of the finished product. We bring to your attention exactly the recipe that street vendors in Brussels use to bake waffles. A special component for the test is sparkling mineral water.

    • 1 cup milk
    • Flour 300 grams
    • Chicken egg 3 pieces medium size
    • Butter 150 grams
    • Sparkling mineral water 100 ml
    • Sugar ¾ cup
    • Baking powder ½ teaspoon
    1. Break the eggs, separate the whites from the yolks. Immediately beat the egg whites with a mixer until stiff, adding a little salt. Place the protein foam in the refrigerator.
    2. Melt the butter, warm the milk to room temperature.
    3. Combine the yolks with sugar and mix. Pour oil into the mixture, add salt, and mix again.
    4. In a separate bowl, mix flour and baking powder, pour in milk in a thin stream, and then the sugar-yolk mixture. Add protein foam and mineral water to the dough. When the mixture has a homogeneous consistency without lumps, you can bake homemade Belgian waffles.

    Recipe 6: Crispy waffles

You can make the waffles crispy if you do not use eggs in the recipe. This recipe is described above, so here’s another secret to crispy waffles - add more flour than is needed for “regular” waffles, and a little soda.

    • Eggs – 4 medium sized pieces
    • Flour 2.5 cups
    • Sugar 1.5 cup
    • Sour cream 100 ml
    • Soda 1 teaspoon
    1. Add soda to sour cream and mix well.
    2. Break the eggs, separating the yolks from the whites. Beat the whites until foamy, then put them in the refrigerator.
    3. Grind the egg yolks with sugar, stir in sour cream and flour. There should be no lumps in the dough, and therefore it is best to mix with a mixer.
    4. Place a tablespoon of batter in the middle of a greased waffle iron and bake crispy homemade waffles.

    Recipe 7: Thin waffles

Thin, gossamer-like, homemade waffles are especially tasty when cooled. The dough is easy and quick to prepare, and its secret is equal amounts of flour, sugar and butter.

    • Chicken egg 4 pieces
    • Flour 250 grams
    • Sugar 250 grams
    • Butter 250 grams
    • Vanilla sugar
    1. Break the egg, separate the yolks from the whites.
    2. Beat the egg whites well with a mixer, then leave them to cool in the refrigerator.
    3. Mix egg yolks, sugar, pour in butter. Whisk the flour into the mixture in a thin stream. When the dough becomes homogeneous, add protein foam to it and mix with a spoon.
    4. Bake thin homemade waffles in a greased waffle iron.

    Recipe 8: Soft waffles

Not everyone likes crispy homemade waffles. Try to prepare a tender and soft delicacy. You can serve soft waffles without toppings, simply sprinkling them with powdered sugar. For these waffles, use more butter than other ingredients. The dough should not be as liquid as for “regular” crispy waffles.

    • Medium size egg 5 pieces
    • Flour 200 grams
    • Sugar 200 grams
    • Butter 250 grams
    • Vanilla
    1. Melt the butter in a water bath.
    2. Beat the eggs with a mixer, add sugar, salt, vanilla. With the mixer running, pour the melted butter into the eggs.
    3. Stir flour into the dough, bring the mixture to the state of thick sour cream. Soft homemade waffles can be baked.

    Recipe 9: Chocolate waffles

Ready-made homemade waffles can be poured with melted chocolate, or you can immediately make them chocolate. Of course, the secret ingredient in this case will be cocoa. Do not buy cheap confectionery cocoa powder, since the taste of the finished chocolate wafers depends on the quality of this component. On sale you can find French cocoa with vanilla or imported cocoa made from 90% cocoa beans. Of course, such a product costs several times more, but you won’t need a lot of cocoa for waffles.

    • Medium size egg 4 pieces
    • Cocoa 1.5 tablespoons
    • Flour 250 grams
    • Sugar 200 grams
    • Butter 150 grams
    • Rum (or rum essence)
    1. Melt the butter in a water bath.
    2. Mix egg, sugar, salt with a mixer. With the mixer running, pour the melted butter into the mixture.
    3. Add flour and cocoa into the dough in a thin stream. Stir thoroughly until the dough is homogeneous.

Bake homemade chocolate waffles, bake for half a minute and roll into a tube.

    1. If the recipe calls for sour cream, you can substitute homemade mayonnaise.
    2. The secret to the golden color of the waffles is the turmeric in the recipe. Use half a teaspoon for 2 cups of flour.
    3. When melting butter for dough, it is most convenient to use a water bath. However, do not bring the oil to a boil.
    4. In addition to rum, you can add cognac to the dough, the waffles will turn out more aromatic and with a pleasant light aftertaste.
    5. More oil in the recipe will make homemade waffles softer.
    6. A very tasty dessert would be waffles rolled into a tube with filling inside. However, remember that the waffles can only be rolled while they are hot. After removing the waffle from the bottom of the waffle iron, immediately twist it using a knife and a towel to avoid getting burned. As soon as the tube has cooled, fill it with thick boiled condensed milk or protein cream.
    7. Before you start baking waffles, prepare your waffle iron. To do this, heat it about ten minutes before starting the process, lubricate it with oil. If the coating in the waffle iron is non-stick, then you don’t have to lubricate it, since the oil in the dough will prevent the product from sticking.
    8. If you place ready-made hot waffles on top of each other, they will soften and stick together. Place them separately - on a plate or board, and stack them tightly when the waffles have cooled.
    9. To reduce the calorie content of waffles or if you follow a vegetarian diet, you can replace milk with water in the same proportion. These homemade waffles will taste blander. Milk waffles are softer and darker in color.

    What you need for cooking:

    Waffle iron;

    Spoon or small ladle;

    Wide bowl for kneading dough and filling;

    Gloves;

Scales or glass for measuring (I have 200 ml.).

    Dough:

    4 chicken eggs (~ 200 gr.);

    170 gr. sugar (1 glass);

    130 gr. flour (1 cup);

100 gr. butter, fat content 82.5%.

    Cooking process:

    • In order to prepare the dough for crispy waffles, we need to melt the butter. This can be done in the microwave or on the stove. I prefer to melt the butter in the microwave, but you need to do it carefully, because... the oil should not boil. You shouldn’t set the timer for a minute and leave the microwave, but it’s better to heat it for 10-20 seconds and check for readiness. Set the melted butter aside for now and let’s prepare the rest of the ingredients.
    • Combine eggs and sugar in a bowl and beat this mixture a little with a whisk. You don’t need to mix for a long time, just enough to get a homogeneous mass. Next, add the slightly cooled butter and whisk everything until the sugar is completely dissolved. Sift flour into the resulting mass and knead the dough.

    • The mass turns out to be quite thick, similar to condensed milk. Set the finished dough aside for now.

    • While the dough is “resting”, we will prepare the waffle iron in which we will bake delicious, crispy waffles. I use an electric waffle iron, so I’ll tell you how to prepare and bake waffles in it. Having greased the surface with a small layer of vegetable oil, we plug the waffle iron into the outlet and wait for the indicator to light up and give us permission to bake waffles in it =) ATTENTION! If you are a child, be sure to prepare waffles with adults, because... it can be dangerous to your health!
    • When the waffle iron is ready, we begin the baking process. I prefer small waffles, so I use about 1 tablespoon of batter per waffle. You can adjust the amount of dough as you wish. The main thing is that there is no more dough than the waffle iron itself =) Close the upper part of the electric waffle iron and bake.

    • You can periodically open the waffle iron and check the degree of doneness (just be careful, the waffle iron can emit very hot steam) . Some electric waffle irons have the ability to select power. I prefer to bake on medium power, in my opinion, it’s easier to control the degree of frying.

    • Remove the finished waffle from the waffle iron using a spatula. Unfortunately, it is difficult to find an electric waffle iron in which the waffle is fried evenly; as a rule, the result is as in the photo below. But this does not affect the taste and crispness of the waffles.

    • If you do not plan to roll the waffle, for example, into a tube, then leave it on the plate and proceed to baking the next one.

    • And if you want to give the finished waffle some shape, then you need to do this immediately after removing it from the waffle iron. The waffles simply instantly become brittle and brittle. Just please be careful, the waffles are very hot! Therefore, it is better to “arm yourself” with clean gloves and work with waffles only in them.

    • Ready waffles cool quickly enough, so when you finish baking the last waffle, the rest will already be ready for your tea party.
    • Brew tea or coffee and enjoy =)

    Note:

    • It is very important to follow safety precautions when working with an electric waffle iron and the waffles themselves. All items are very hot! Of course, today the word “waffles” most often brings to mind associations with typical store-bought cookies. As a last resort - with “Viennese waffles”, which are served in any cafe.

But today you and I will bake vintage waffles.

Instead of modern Chinese units - a weak semblance of a Soviet waffle iron, let's take just this one from the mezzanine and please our family delicious pastries.

So get ready to write down the waffle recipe for the Soviet waffle iron, especially since it is quite simple.

    We need:

    • egg (4 pcs)
    • sugar (1 cup)
    • vanilla sugar
    • margarine (1 pack) or, for example)
    • flour (1-1.5 cups)
    • salt, vinegar slaked soda

Here is the sequence of actions:

Beat the eggs (not into foam!), add sugar to them (combining with vanilla), pour in melted and cooled margarine. Sift the flour through a sieve and slowly pour into the dough while the mixer is running. Finally, add a little salt and half a teaspoon of soda and vinegar.

It is advisable to sift the flour through a sieve - this will make the crispy tubes more fluffy.

If you forgot (or didn’t know) how to use the good old Soviet electric waffle iron, then wash it thoroughly, dry it and wipe it with vegetable oil. Pour a little more than a tablespoon of batter (like for pancakes) onto the hot (well-heated) surface of this kitchen retro unit, cover with the other half of the waffle iron, and press.

After half a minute or a minute, open, remove the finished wafer with a spatula and quickly Roll up into a roll or tube.

    Here she is, our assistant:

The waffles should be ready crispy, crumbly. This is an old recipe; every girl knew it in Soviet childhood.

We decorate our baked goods like this: either sprinkle with powdered sugar, or fill with cream (cream, condensed milk). The latter is problematic, because this confectionery product turns out to be quite crumbly and fragile.

    Bon appetit!

The first waffles began to be prepared in Germany in the 13th century, and at first this dessert was considered a dish for the poor. The dough was kneaded from leftover products, and ordinary water was used instead of milk or cream. baked in special square molds with patterns in the form of a honeycomb, traces of which remained on the finished products, so they were called Wabe (honeycomb), over time this word was transformed into Waffel, that is, waffles. In the next century, simple homemade waffles turned into a confectionery delicacy with hundreds of different recipes.

    Why we love waffles

This delicacy, which is a thin cookie with a honeycomb imprint on the surface, has no analogues in the world. For waffles, a batter is made from eggs, sugar, flour, cream or milk. Some recipes contain butter and vegetable oil, starch, corn flour, kefir, cottage cheese, milk, sour cream, mineral water or honey. Waffles are prepared with baking powder or yeast, and nuts, rum, coconut flakes, lemon and orange zest, cocoa, vanilla, poppy seeds, cardamom, cinnamon and cloves are used as savory additives. Homemade crispy waffles are delicious on their own, but even tastier when layered with cream, praline filling, fudge, jam, preserves, honey or condensed milk. Wafers are used to make cakes, pastries and ice cream, so they are also produced in the form of round cakes, tubes or cups.

How waffles are prepared in different countries

Each national cuisine has its own secrets for making waffles. Dutch stroopwafels are made of two wafer layers held together with caramel syrup, and Dutch waffles are very thin and fragile - they are combined with caramel, poured over syrup and always eaten hot. Norwegian krumkake are waffles rolled into a tube or cone and filled with a sweet filling. Belgian waffles resemble fluffy donuts because the dough is made with yeast and egg whites. Classic English waffles are not a dessert, but a snack, since the dough in this case is mixed with vegetables and oatmeal. Viennese waffles usually have a crispy crust and a soft crumb inside, they are prepared with high-quality butter and are large in size, Liege waffles are dense, oval and very sweet. In Brussels, waffles are fried right on the street - the dough is placed in beer, the finished dessert is sprinkled with powdered sugar and decorated with whipped cream. In the USA they prepare very voluminous and thick waffles, and in the Czech Republic they always add almonds and water from medicinal sources to the waffle dough. Japanese waffles have the shape of a fish, the dough contains chocolate, sesame seeds and grated beans, but the most exotic waffles are made in Thailand, as they turn out green due to a large number of herbs.

How to make waffles at home

Making homemade ones is easy and simple - mix all the ingredients sequentially into a homogeneous dough without lumps; you can use a mixer for this purpose. However, there are several secrets that affect the quality and consistency of the dough.

Secret 1. Using yolks and butter in the dough will make the waffles incredibly soft and tender, and adding whipped whites will make them crispy. The crunchy texture is also achieved by adding starch in a 1:1 ratio to flour.

Secret 2. If instead of sugar you add powdered sugar to the dough, the finished products will not stick to the waffle iron and will melt in your mouth.

    Secret 3.

Secret 4. The liquid component is usually water, milk, kefir, but the best dough is made with cream. Creamy waffles are especially tasty, aromatic and tender.

Secret 5. All products should be at room temperature, and the butter should first be softened in a water bath. Never bring the oil to a boil if you are going to cook waffles.

Secret 6. Do not replace butter with margarine or spread. The higher quality and more natural the product, the tastier the waffles will be, but replacing sour cream with mayonnaise gives a very interesting taste.

Secret 7. Be sure to sift the flour so that the dough is saturated with oxygen - such waffles will be light and airy.

Secret 8. Some housewives, trying to make waffles sweeter, increase the dosage of sugar, and then are surprised that the products turn out darkish. For light waffles, sugar should be measured strictly according to the recipe.

Secret 9. Homemade waffles can become more interesting and original if part of the wheat flour is replaced with other types of flour - corn, rice, almond, bird cherry, buckwheat, oatmeal. If you are baking very fluffy waffles, you can add dried fruits and nuts to the dough, and thanks to lemon or orange zest, the products will acquire a fresh taste and aroma. You can add up to 12 ingredients to the dough, including alcohol.

Secret 10. The dough should be moderately liquid and thick enough to resemble homemade sour cream. Crispy thin waffles are baked for 30-40 seconds, thick and fluffy waffles - 2-3 minutes.

Secret 11. If the dough contains oil and the waffle iron has a non-stick coating, it does not need to be lubricated additionally. It is recommended to preheat the pans before baking waffles.

Secret 12. It is better to immediately give the finished waffles the desired tube or cone shape, since as they cool, they lose their plasticity and become more brittle. Do not stack waffles on top of each other when hot - in this position they quickly become damp, stick together and lose their crispy texture.

Secret 13. For a pleasant taste and aroma, the powdered sugar that will be sprinkled on the waffles can be mixed with cinnamon, vanilla and cardamom. It will turn out very unusual! Or you can simply dip the waffles in chocolate glaze or condensed milk.

Secret 14. If you want to fill the waffles with filling, do this only before serving, otherwise the products will become soggy and lose their spectacular appearance.
