To make the cottage cheese Easter cake tender, fluffy and tasty, you need to know some of the subtleties of the recipe and cooking secrets. The beautiful and fragrant symbol of Easter will stand out not only in appearance, but also in the impeccable smell of fresh baked goods. This proven recipe for Easter cake with cottage cheese can be mastered even by those who will be preparing such pastries on their own for the first time.

Recipe for cottage cheese Easter cake

List of ingredients:

  • Cottage cheese (any fat content) – 350 g;
  • Milk – 200 ml;
  • Butter – 120 g;
  • Chicken egg – 2 pcs.;
  • Sugar – 130 g;
  • Vegetable oil – 1 tbsp. spoon;
  • Wheat flour – 1 kg;
  • Yeast (fast-acting dry) – 10 g;
  • Vanillin – 10 g;
  • Candied fruits – 100 g.

For the glaze:

  • Granulated sugar: 130 g;
  • One egg white;
  • 2 teaspoons lemon juice.

Sequence of dough preparation:

1. Take cottage cheese. If the product is coarse-grained, then it needs to be ground through a sieve or broken into a tender, soft mass with a blender.

2. Pour warm milk into an empty bowl. Add two tablespoons of sugar.

3. Add yeast and 2 tablespoons of flour to the liquid mixture. Mix everything well. Cover the bowl with the dough with a towel. Leave it warm for 10-15 minutes.

4. Break the eggs into a separate bowl, add sugar and beat everything with a mixer. You should get a light mass.

5. Add butter and cottage cheese to the egg mixture. Beat everything well for 5 minutes.

6. While beating, add vanillin. The result should be a delicate, creamy mass.

7. Transfer the creamy mixture into a bowl with the dough. Stir everything well. Pour vegetable oil into a homogeneous mixture. Mix everything again.

8. Gradually add flour to the dough. In the process of adding flour, you need to add candied fruits. To prevent candied fruits from sinking down in future Easter cakes, you should mix them with flour before adding them to the dough.

9. As a result of long kneading, you should get a dense dough. Cover the bowl with the curd dough with a towel and leave it to proof for about 3-4 hours. It is important to remember that curd dough is quite difficult to rise, therefore, under not very favorable temperature conditions, it can increase in size much longer than the stated time.

10. The risen dough must be kneaded with your hands. Place it in molds. Let it brew for another hour. Be sure to cover the top with a towel or napkin.

11. Bake cottage cheese cakes in the oven for 40 minutes at 200 degrees.

Preparing glaze for Easter cake:

1. Place lemon juice and egg white in a bowl with sugar. Beat all ingredients with a mixer until thick, dense, white mass. Beat for 5-7 minutes. Make the device speed medium.

Allow the Easter cakes to cool slightly. Remove the products from the molds and brush with glaze. Decorate the baked goods to your taste.

Bon appetit!

The recipe for cottage cheese cake for Easter may be useful for those who want to prepare cake quickly and without yeast. Easter cake made from cottage cheese dough is no less tasty than classic yeast cake. It is just as heavy, but at the same time with a softer and moister structure.

To prepare Easter cottage cheese cake, prepare the ingredients according to the list.

Mix cottage cheese, egg, sugar, milk and vegetable oil.

You should get a homogeneous mass.

Then add flour with baking powder. Stir and knead into a soft, fluffy dough.

Wash the raisins and, if necessary, if they are dry, steam them.

Stir raisins into batter.

Place the dough in appropriately sized molds or in one mold so that it occupies 2/3 of the volume. Bake cottage cheese cakes in the oven at 180 degrees until done, from 30 to 45 minutes, depending on the size of the molds and the properties of the oven. Check doneness with a wooden toothpick.

For yeast cakes, it is recommended to insert wooden sticks in the center so that the surface does not move away during baking and the top of the cake is smooth without breaking. Out of habit, I stuck a wooden stick into the curd cake. By taking out a stick, you can check the readiness of the cake.

I'm wary of using raw eggs, so I don't use egg whites to make the glaze. For icing or fondant, you need some liquid, such as milk or fruit juice, mixed with powdered sugar. If desired, tint the glaze with food coloring.

Cover the finished warm Easter cakes with glaze and decorate with confectionery sprinkles.

Easter cottage cheese cake is ready.

Here is a cross-section of a warm, that is, not completely cooled, cottage cheese cake.

Enjoy your tea! Happy Easter!

Curd cake- an incredibly tasty and simple recipe that will appeal to all housewives without exception. If you prefer classic baking for Easter, then choose a recipe with cottage cheese added to the dough, but you can choose an original recipe where the pasochka is prepared exclusively from cottage cheese.

Curd cake

Because it's very easy to prepare cottage cheese cake, recipe with photo may be useful for those who have neither the time nor the desire to tinker with yeast dough for a long time. If you have ever baked such an Easter cake, then you know how much trouble there is with it: you need to prepare the dough, and then thoroughly knead the yeast dough, wait several times for it to rise, and knead it each time. Thus, taking into account all the necessary steps to make the pastry airy and tender, it will take you the whole day to prepare. Of course, it turns out very tasty, and everyone likes this kind of baking, but you should definitely try the recipes offered today.

When will you cook cottage cheese cake, recipe with photos step by step can be roughly divided into three stages: kneading the dough, kneading the dough and directly baking the beans. Decorating the baked goods comes separately, here you can show all your confectionery skills, or go the simplest way - and grease the top with whipped egg whites.

For the dough we will need:

    a quarter glass of milk

    heaped spoon of flour

    8 grams of dry yeast, which is equal to two level teaspoons

    teaspoon granulated sugar

For the test you need to prepare the following set of ingredients:

    250 grams of cottage cheese (tasty, not sour, not runny)

    a couple of glasses of flour

    50 grams of melted butter

    2/3 cup granulated sugar

    2/3 teaspoon salt

    two chicken eggs + one yolk

    2/3 cup candied fruits, raisins and other dried fruits as desired

    a spoonful of vanilla sugar, lemon zest

    a pinch of turmeric

The indicated amount of ingredients is enough for us to bake two small ones with a diameter of 14 cm. You can take small molds, then you will get more beans. If you want to treat your family and friends with baked goods, then you can increase the number of components by 2-3 times, but this must be done proportionally. Easter baked goods can be stored for a long time, but to prevent them from drying out and becoming weathered, it is better to store them on a plate wrapped in a large bag.

Curd Easter cake recipe

If you are going to cook cottage cheese cake for Easter, recipe you need to start by kneading the dough. First, we need to slightly warm the milk so that it becomes warm (but not hot), pour it into a bowl and add to it a few tablespoons of flour, the specified amount of sugar and dry yeast. All components must be thoroughly mixed with a spoon so that the flour disperses and there are no lumps left. The bowl with the dough should be placed in a warm place, and it will rise after 20 minutes, much faster than when prepared with live yeast.

While the dough is rising, you can start preparing the cottage cheese. You will need a sieve or colander to rub the curd through the small holes so that it becomes crumbly. First, add chopped butter, vanilla sugar, turmeric and lemon zest to the curd, and then grind all the ingredients well. You should get a loose sticky mass. By the way, we added turmeric to make the dough yellowish, then it looks very appetizing. And the lemon zest will add a slightly perceptible aroma. You can safely discard these ingredients and leave only vanillin.

When you cook cottage cheese cake, Easter recipe cannot do without the use of kitchen appliances. We will need a mixer to beat the sugar with the yolks, separate two yolks from the white, and leave the white for the glaze, plus add another yolk. Beat at high speed for no more than 4 minutes so that all ingredients are thoroughly mixed. Now the beaten eggs must be added to the cottage cheese and mixed carefully so that the air mass does not settle.

By this time, the dough has already increased 3-4 times, and it can be sent to the rest of the mass. You need to wash the raisins in advance and let them dry on a paper towel, after which the raisins along with candied fruits should be sprinkled with flour and the sweet ingredients should be added to the dough.

Be sure to buy only the highest grade flour, and when purchasing, pay attention to the integrity of the packaging. It should be sifted to saturate it with oxygen and add the first glass of flour to the dough, then mix the mass well with a spoon. When the first glass is evenly distributed among the other ingredients, you can add the second glass. Now you can knead a thick dough that will be quite sticky.

Make sure that the candied fruits are evenly distributed throughout the mass and not concentrated in one place.

Easter cottage cheese cakes: recipe with photos

When you start baking Easter cottage cheese cakes, recipe with photos will require special molds from you. It is most convenient to use disposable paper molds, which do not require any additional preparatory steps. If you have ordinary forms, you must grease them with oil or line them with oiled tracing paper.

You need to put enough dough into each mold so that it takes up half the volume. Since our dough is yeast, it will still rise. That is why you cannot fill the molds completely, in which case the mass will rise and literally flow out.

The molds filled with dough should be covered with film or a clean towel and left for several hours in a warm place, for example, they can be placed near the radiator. In the classic version, yeast is prepared a little differently: it is left to rise in a saucepan, and when it increases in size, it is kneaded, releasing carbon dioxide, and then left to rise again. This takes a lot of time, sometimes it can take up to 8 hours just to prepare the test.

We have cottage cheese cake recipe simpler: 20 minutes for the dough and another hour and a half for the dough to fit in the mold. To ensure a warm place for the ramekins, you can place them in a slightly preheated oven.

When the dough has risen, you can bake the cakes. To do this, preheat the oven to 190 degrees and place the mold with the dough on a baking sheet. You may notice that the Easter cakes have begun to burn, so you can cover the top with additional foil and continue baking. Large beans should be baked for about 50 minutes, and small ones, of course, will take a little less time. To check the readiness, just pierce the dough with a wooden skewer and look at it: if the skewer is dry, then baking has come to an end.

All that remains is to decorate with glaze cottage cheese cake for Easter, recipe with photo will tell you how to do this. First, we need to remove the baked goods from the oven, let them cool and remove them from the molds (if you are using metal or ceramic molds). The glaze is simple to prepare - from proteins and sugar, which are whipped with a mixer until strong foam. The glaze is applied to the tops of the already cooled Easter cakes, and you can additionally decorate with confectionery sprinkles.

Easter cottage cheese cake

The next option is how to cook Easter cottage cheese cake, will be a real surprise for the hostess, because to prepare it you do not need flour, but only cottage cheese. Plus, you don't have to knead the dough and wait for it to rise. Of course, you can’t call it elementary, because there are many subtleties in it, but you will certainly cope with the preparation if you follow our tips and recommendations, and step-by-step photos will come in handy.

    half a kilo of cottage cheese

    200 ml sour cream

    100 grams of butter

    100 grams of powdered sugar

    a pinch of vanillin

    50 grams of dried fruits or candied fruits

You will get the most tender cottage cheese cake for Easter, which will take you a minimum of time to prepare. The main task is to choose high-quality cottage cheese for this recipe; it should be fatty and high-calorie, always sweet and not sour. It is best to buy a homemade product from the market, and be sure to try it before purchasing.

Preparing the dough comes down to turning all the ingredients into a homogeneous mass. You may need an immersion blender for this, but a food processor can also be used to blend the curd into a smooth consistency. Place the cottage cheese in a container, add powdered sugar and soft butter (it must first be removed from the refrigerator and left at room temperature).

All components must be crushed in a food processor using the “Knife” attachment to obtain a homogeneous paste. Then add sour cream to the container and beat the mixture again until smooth. The base for the pasochka should be homogeneous and tender, and its consistency should resemble a thick cream.

Candied fruits can be cut into smaller pieces, and raisins must be thoroughly rinsed with running water before adding to the base. You can add dried apricots, but you definitely need to cut them into small pieces. Dried fruits should be evenly distributed throughout the mixture and mixed thoroughly.

To make it very beautiful without baking, we advise you to use special plastic molds called bean pans. This is a plastic collapsible design that will help you form a beautiful little bead with a cross and the inscription “XB” embossed on it. And when the Easter cake is ready, you can disassemble the structure without damaging the dessert itself. If you are cooking for the first time, so to speak, for testing, then you can prepare it without a special beaker, using a deep bowl or a plastic jar with holes as a mold. The volume of the plastic mold should be 750 ml, and holes and openings are necessary to allow the juice that will be released from the curd mass to drain.

Hi all!

And today the plan is Easter baking with cottage cheese. Have you ever cooked such dishes? Then this is the place for you! After all, we are all already thinking about the holiday of Easter and are intensely looking for high-quality and proven recipes for Easter cakes. But at the same time, we often forget the amazing options with healthy dairy products.

Depending on their age, they can help set the festive table. They will prepare salads, decorate the house and, of course, help in preparing delicious cottage cheese pastries. There is nothing complicated and we will try to reveal all the secrets and nuances.

I will add that in the selection of recipes I do not focus on fondant and decoration. I have a detailed note. If you wish, you can look into it.

The most delicious recipe for cottage cheese dessert without adding yeast

I start with the most delicious, aromatic Easter cake. The recipe is simple and cooking does not take much time, which sometimes makes working chefs so happy.

And the baked goods turn out “wet”, but at the same time not gummy.

Required ingredients:

  • Wheat flour - 300 grams;
  • Cottage cheese 9-18% fat - 300 grams;
  • Softened butter - 150 grams;
  • Sugar - 300 grams;
  • Eggs - 3 pieces;
  • Baking powder - 16 grams;
  • Raisins - 2 tbsp. spoons;
  • Vanillin - 1 teaspoon.

Preparation:

1. First, melt the butter and pour hot water over the raisins. We put them aside, their time will come.

2. Whisk the eggs with sugar and vanilla. Pour in the cooled melted butter.

3. Pour fresh cottage cheese into the yellow mass and again rub thoroughly with a whisk. My family loves it to be felt later in baked goods. And some people like more delicate products, and therefore the dairy product can be crushed first.

The curd can be passed through a sieve or you can grind it with a blender.

4. Combine wheat flour with baking powder. Mix everything with a spoon so that they become one.

5. Now sift the flour through a strainer directly into the mixture. This should be done in small portions and at the same time work with a whisk to immediately knead the dough.

It should not be too tight and not too runny. If it turns out too liquid, then add a little flour. But be careful here and don’t fill it with flour. Still, the consistency should be slightly thicker than fatty sour cream.

6. Drain all the water from the dried grapes. It needs to be dried a little on a towel, and then poured into the mixture. Mix, spreading evenly over the dough.

7. Fill the molds 2/3 full. Let them rest for 30 minutes and turn on the oven at 180 degrees Celsius. We need to put the beans in a preheated oven.

While the molds were standing, during this time the curd swelled. This means that everything will rise well during baking.

8. Place the molds on a baking sheet and bake for 40 minutes. The small paska was prepared in 40 minutes, but the larger one took longer - 1 hour and 10 minutes. At the same time, to prevent the tops from burning, they can be covered with a sheet of regular foil.

9. Cool the finished cakes and cover them with fresh fondant. We decorate beautifully to your taste.

I wish you bon appetit and we will prepare the orange deliciousness below.

Preparing wet cake with oranges

More tender - this is how you can call delicious baked goods with orange fruit. And indeed, the finished dish melts in your mouth. And at the same time you feel an amazingly tasty delicacy and your mood becomes orange-pre-orange!

Guess what's the highlight here? I’ll give you a hint: the whole orange goes into the recipe, not just its zest. Which only improves its qualities.

Required ingredients:

  • Milk at room temperature - 60 ml;
  • Dry yeast - 10 grams;
  • Sugar and flour - 1 tbsp. spoon.
  • Sifted flour - 500 grams;
  • Cottage cheese - 250 grams;
  • Softened butter - 50 grams;
  • Sugar - 150 grams;
  • Eggs - 3 pieces;
  • Oranges - 2 pieces;
  • Vanilla sugar - 1 sachet;
  • Salt - 0.5 teaspoon;
  • Chocolate for glaze - 150 grams and several orange slices.

Preparation:

1. Prepare a simple dough. In a cup with milk, mix sugar, yeast and flour. We take the cup to a dark place for about 15 minutes. During this time, the yeast will activate and begin to bubble.

2. Remove the zest from one orange on a grater. We act here carefully so as not to touch the white part, because we only need the orange one.

The grated white peel of the fruit can add bitterness to the product.

3. Then squeeze both oranges to get 200 ml of juice. This is exactly the amount of fresh juice we need when mixing delicious baked goods.

4. Rub the curd through a fine sieve. Mix it with softened butter. Small grains of cottage cheese will perfectly become a homogeneous butter mass.

5. Separately break 2 eggs into a bowl, and take only the yolk from the third one. Pour all the sugar, salt and a bag of vanilla sugar into it.

6. Beat everything with a mixer into a good foam. Pour the dough, freshly squeezed orange juice, zest and butter curd into it. Shake with a mixer at medium speed.

7. We begin to slowly add wheat flour. At the same time, it won’t hurt to sift it once again.

8. Knead the baked goods. Here you can use a mixer with whisks to knead the dough. Or we transfer it to the table, which we dust with flour. And then we continue to knead. It is so soft and warm that kneading the dough will be a pleasure.

9. The mass became tender and stopped sticking to your fingers. Place it in a bowl under cling film for 2 hours. You need to make holes in the film itself so that the kneading pan can breathe.

10. It doubled during this time. Knead and again place under cling film in a warm place for an hour.

11. Set the oven to heat up to 190 degrees.

12. Divide our baking into 2 molds. It is advisable to fill it 1/3 full. We will set the molds again to rise for 40 minutes. And you can go straight to the warm stove.

13. Place them in the oven and bake for 30-40 minutes. The time depends on your kitchen assistant. Let the finished delicacy cool well.

14. Crush the chocolate into small pieces and melt it in the microwave. Or you can bring it into a liquid state in a water bath.

Well, let’s water our work of art from above! Decorate with orange slices and you can add a sprig of mint.

We invite you to the table and enjoy!

Easter bread made from cottage cheese with dry yeast

Of course, a more fluffy and airy cake with cottage cheese is obtained if it is cooked with yeast. Here I suggest you familiarize yourself with a delicious option made with dry yeast. But, if you really want, you can replace them with live ones.

We will need:

  • Wheat flour - 520 grams + 1-1.5 cups for kneading;
  • Cottage cheese 9-18% fat - 150 grams;
  • Softened butter - 100 grams;
  • Sugar - 100 grams;
  • Full-fat milk - 110 ml;
  • Warm, clean water - 100 ml;
  • Eggs - 2 pieces;
  • Dry yeast - 1 tbsp. heaped spoon;
  • Raisins (candied fruits and nuts) - 100 grams;
  • Vanillin - 1 teaspoon.

Preparation:

1. Place all the necessary products on the table. The butter will just soften. And heat the water and milk a little until warm. After all, it is known that yeast works better in a warm environment.

I repeat repeatedly that the flour needs to be sifted through a sieve several times. The airiness of the baked goodies will depend on this.

2. Create a dough. In warm water, stir a tablespoon of sugar from the total amount and a heaped spoonful of yeast. Let's set it aside for now.

If you are cooking with live yeast (and you need to take 30 grams of it), then you need to add a tablespoon of flour to the kneading bowl and put it in a warm place for 15-20 minutes.

3. In a deep container, mix cottage cheese, 2 chicken eggs, sugar, salt and vanilla sugar. Here at this stage you need to break the cottage cheese well so that there are no grains left. Otherwise they will remain like that during baking.

4. Throw out all the butter. It has become soft and mixes easily with the overall tasty mass.

5. Pour out the warm milk and add the dough. Mix with a whisk. If you have a mixer, you can shake everything with it at low speed.

6. Little by little, add flour and continue stirring, breaking up all the flour lumps.

7. Add more flour than required and throw the dough onto the table. Add flour and knead it well with both hands until it becomes elastic, soft and stops sticking to the handles.

Monitor this process here, but do not add too much flour. It shouldn't be too tight. This will then have a bad effect on the rise of the beads before baking.

8. Add raisins or candied fruits to the elastic pastry. You can also add nuts. We knead it so that the additives are distributed throughout the mass.

9. Place the dough in a large bowl so that there is still room for it to rise. Cover with film and set aside in a warm place for 1.5-2 hours.

You can make a warm place like this: take a bowl of boiling water and place the dishes with baked goods on it. In this case, you need to create the conditions of a water bath. Make sure that the bottom does not come into contact with hot water. All you need is steam.

During this time it will increase by 2 times. Let's take it out again and release all the air bubbles. Prepare the molds. Lubricate them with oil and line them with tracing paper.

10. Turn on the oven to heat up to 190 degrees.

11. Fill each bowl 1/3 with baking as always. Leave in a warm place, for example, on a heated stove for another 30 minutes. During this time, the baking will rise almost to the edges. Here you can optionally brush the tops with beaten yolk. They will then shine pleasantly and the glaze will fall on them easily.

12. Place in the oven for 35-40 minutes. Check readiness with a stick. Now they are ready, they have become rosy. What a beauty!

Now let them cool and you can cover them with fondant. And the recipes.

Bon appetit! Let's move on to an interesting recipe that does not require the use of an oven.

This recipe is for those who watch their figure. Indeed, girls, summer is coming! I need to lose those extra pounds, and I also want to celebrate Easter.

As an option, you can eat some regular baked goods and more dietary ones.

Ingredients:

  • Cottage cheese 1% fat - 250 grams;
  • Coconut flour - 50 - 100 grams;
  • Stevia or other sweetener - 1.5 teaspoons;
  • Chicken eggs - 3 pieces;
  • Baking powder - 1.5 teaspoons;
  • Vanilla - 1 pod;
  • Raisins and nuts - 50 grams.
  • Sour cream or low-fat yogurt - 1 tablespoon;
  • Honey - a teaspoon.

Preparation:

Soak raisins in boiling water. And preheat the oven to 180 degrees.

Mix cottage cheese and eggs in a bowl. It’s better to use a blender here, so you don’t even need to strain and grind the curd in advance.

Shake with an immersion blender and add vanilla extract or ground vanilla bean.

For more flavor, add ground nutmeg, cardamom and cinnamon. It still won’t add any extra calories, but the product will turn out much spicier and tastier.

In a separate bowl, mix coconut flour, sweetener and baking powder. Instead of baking powder, you can add 0.5 teaspoon of soda. Dump everything into the egg mixture. Take a fork and stir until smooth.

The dough should not come out liquid, but so that it can be rolled into an elastic ball. Therefore, if necessary, add coconut flour, but not more than 100 grams!

Dump out the dried raisins and nuts and spread them over the entire dough again with a fork. Place the pastry in the pan and bake for 40-45 minutes.

Cover the finished and cooled Easter cake with sweet glaze. To do this, simply mix honey and sour cream until smooth and apply to the top of the cake. Decorate with sprinkles.

Bon appetit and always be slim and beautiful!

Recipe for an Easter treat in a bread machine

It's no secret that kitchen appliances are very helpful. I don’t like my soul. I have it as a double bread maker-multi-cooker. I often use it to bake homemade bread. It turns out so delicious that we immediately eat it hot from the heat.

She doesn’t fail with this recipe for a cottage cheese treat for Easter either. It doesn’t just let you down, it simplifies it. And this year I will use it to quickly prepare baked goods.

Required ingredients:

  • Cottage cheese 9-18% fat content - 150 grams;
  • Sifted flour - 450 grams;
  • Sugar - 100 grams;
  • Chicken eggs - 1 piece;
  • Warm milk - 180 ml;
  • Vegetable oil - 4 tbsp. spoons;
  • Dry yeast - 1.5 teaspoons;
  • Salt - 0.5 teaspoon
  • Candied fruits - 50 grams.

Preparation:

1. Let's prepare all the products. Sift the flour several times, saturating it with air. Warm the milk to room temperature.

2. Pour cottage cheese into the bowl of the bread machine.

Be sure to check that the kneading pin is inserted. Sometimes I inadvertently forget to put it in and then I have to pour out all the mixture to put it back in place.

3. Add half a teaspoon of salt. Beat in the egg and pour in warm milk.

4. Measure 4 tablespoons of vegetable oil into a bowl. Add flour. We make a small hole in it, where we put the yeast.

5. Set the baking program for 2.5 hours. For some, this is a 3-hour program and is called either “Sweet” or “Main”.

6. In general, you know your girlfriend better. The program just needs to be three hours long and the process should be something like this - kneading, rising, kneading again, rising and baking.

Add candied fruits or raisins when the bread machine beeps for additional ingredients.

Cool the finished cake and carefully remove it from the bowl. Cover the top with white icing and decorate as desired.

Let's enjoy it!
