How to store dogwood for the winter in the freezer

Preparation:

  2. Pour granulated sugar into a pan of suitable size (preferably with a thick bottom), pour water, put on fire, stirring the contents. After boiling, cook the syrup for 5 minutes.
  3. Place the dogwood into the prepared syrup, remove the pan from the heat and leave to cool for about 12 hours.
  4. The next day, put this container on the fire again and wait until it boils. Then boil the berries in the syrup over low heat, skimming off the foam and making sure to stir the jam so that it doesn’t burn. Cook for about half an hour until the fruits are soft.
  5. Pour hot jam into prepared jars, roll up the lids and wrap in something warm until it cools completely.

But jam with seeds, even though they contain useful substances, is not loved by everyone. If desired, they can be quickly and easily removed from the berries.

Advice. To make the seeds easier to separate from the fruit, the dogwood can be kept in a water bath for some time.

Dried dogwood fruits

The recipe for making dried dogwood is not as complicated as some housewives think. Berries prepared for the winter using this method are well stored. They taste good and are elegant in appearance. Whole and undamaged fruits need to be sorted, washed, and pitted. Then cover them with granulated sugar and keep them in this state for about a day.

After this time, the sugar syrup that has formed must be drained, and the berries themselves must be placed on a baking sheet and placed in the oven. Keep them at a temperature of about 80-90 degrees for 15 minutes, then remove and leave until cool. Then repeat this procedure 2 more times.

Drying fruits

I will share the recipes for the preparations that we make from dogwood, perhaps they will be useful to you too. We prepare dogwood compote, freeze dogwood, prepare dogwood jam, as well as a very tasty sauce for meat with the addition of herbs and spices. So if you don’t know what to cook from dogwood berries, you’ve come to the right place.

Dogwood jam (jam) for the winter

  • 1,300 kg. dogwood
  • 1 kg. Sahara
  • 100 grams of water

Wash the dogwood, remove the tails and spoiled berries. Place the berries in a saucepan with a thick bottom. Add water and bring to a boil, reduce heat. Cook the berries until softened. In time it takes 40 -45 minutes.

Then you need to wipe the berries using a strainer and a whisk. You need to wipe the berries while hot. I indicated 1.300 berries in the recipe, since we need 1 kg. prepared dogwood puree. This includes bones and skins.

When the berries are pureed, a homogeneous puree remains. Add 1 kg of sugar to the puree, place the puree in a saucepan with a thick bottom, cook over low heat for 10-15 minutes, stirring and skimming off the foam.

The finished dogwood jam should be poured into sterile jars and sealed with sterile lids. From this amount of ingredients we got 3 half liter jars of dogwood jam.

Hot jam is slightly runny, but don’t let this bother you, after cooling it becomes very thick, like marmalade. This is an excellent filling for pies, pies, bagels and other baked goods. The jam turns out delicious, aromatic and very beautiful.

Dogwood compote

At the time of writing, we had not yet cooked the compote, but the compote that we prepared last year has long been drunk. But a little later I will add a photo of the compote.

We don't prepare a lot of compote, usually 3-4 three-liter jars. After all, in addition to dogwood compote, we prepare apple, plum, and strawberry compote.

We prepare dogwood compote using the pouring method.

Add 2 cups of washed dogwood to each jar. Fill with boiled water and leave for 20 minutes. Then drain the water, boil again and pour in the dogwood for 15 minutes.

Then I pour 1.5 cups of sugar into each jar and pour boiling water over it. I roll up the cans. I turn the jars over and wrap them for a day.

At first the compote will not be red at all, almost transparent, but after a few days the berries will give up their juice and the compote will become a very beautiful ruby ​​color.

Dogwood sauce

Ingredients for the sauce:

  • dogwood 1 kg
  • sugar 3 tablespoons
  • salt 1 teaspoon
  • black pepper 1/2 teaspoon
  • dry mint 1 dessert spoon
  • pepper mixture
  • cilantro
  • dill
  • clove of garlic

We make the sauce every year, eat it ourselves and treat it to guests, everyone loves the sauce. They didn’t break tradition this year either; they prepared dogwood sauce.

Nowadays, preserving berries, vegetables and fruits has become much easier. The most important thing is to have a large and good freezer. Frozen dogwood berries retain most of their beneficial properties. Therefore, dogwood, like other berries, can be frozen for the winter.

But, freeze only ripe dogwood berries. The berries need to be sorted and washed. Be sure to dry them on a paper towel; we don’t need excess moisture in the freezer.

The berries are laid out in a thin layer on a tray or cutting board, frozen, and then the frozen berries are placed in plastic bags or tight bags with a zip fastener. We store the berries in the freezer.

Dogwood is a berry with a pronounced sourness (I have never encountered a completely sweet dogwood, even overripe berries have a sweet and sour taste). Therefore, it is still advisable to buy ripe dogwood for freezing, so that later, when cooking compote, for example, you do not add too much sugar to it.

To determine the ripeness of a dogwood by eye, pay attention to its color. The berries should be dark burgundy in color. If your dogwood is scarlet or pale red, it is most likely unripe and will taste too sour. Try placing this dogwood on a tray and leaving it for 2-3 days at room temperature. The dogwood should darken and become less sour.

When you sort through the dogwoods and clear them of twigs and leaves, immediately sort them, that is, put the soft, overripe berries in a separate plate.

Place the selected elastic dogwood into a large sieve or colander and rinse it well under running water. If there is dirt or sand stuck to the berries, wash them off with your hands.
Rinse soft dogwood berries with water in a separate sieve.

Washed, more elastic berries need to be dried. Lay out a kitchen towel and scatter the berries on it in an even layer. Let it dry for 15-20 minutes.

After the water has drained from the berries, they can be transferred to the freezer, scattered on a special tray. If there is no such compartment, then place the berries on a flat plate and freeze them by placing them in the freezer.

Set the freezer temperature to minus 20 degrees. Such a low temperature will freeze the berries very quickly. In just 15-20 minutes they can be taken out and packaged.

Slightly frozen berries will not stick together during packaging and storage, so you don’t have to worry that when frozen in a large bag they will turn into a large solid briquette; the main thing is to do everything quickly and not let the berries thaw.

Since I have a separate freezer at home and there is a lot of space in it, I use different containers for freezing. I find it convenient to freeze berries both in small containers and in Zip-lock bags. You can choose only bags, or trays, or both.

It is very convenient to release air using a drinking straw. Insert the straw into the bag, close the Zip-lock and draw air from the bag. Pull the tube out sharply and quickly close the bag.

There should be as little air left in the bag as possible.

Sign the label - dogwood, month and year of preparation of the product.
Transfer the bags and trays of dogwood to the freezer.

Now let's deal with the soft berries. Place them in a sieve with large holes (this is important!) If the sieve is very fine, then not all the pulp will be able to pass through the sieve.

Place the sieve with berries in a deep bowl or bowl. Pressing the berries with a spoon, try to intensively grind them through the sieve.
I will say right away that the process is not very easy, the hand quickly gets tired from such work. Take your time, rest for 4-5 minutes and grind the berries again. To make the work easier, you can use a special wooden pestle.

As a result, you will be left with only the seeds in the sieve and, possibly, the remains of the dogwood skin.

Try the dogwood pulp; if it is a little sour for you, then add sugar to taste. Stir until the sugar is evenly distributed in the puree.

Using a teaspoon or dessert spoon, transfer the puree into ice cube freezer compartments.
Place the trays in the freezer for about 1-1.5 hours. At a temperature of minus 20 degrees, dogwood puree cubes will freeze quite well.

Carefully remove the dogwood cubes from the tray and place them in a bag.

Whole dogwood berries can be stored for no more than 9 months, and it is advisable to use puree within 3-4 months. The temperature should be minus 18 or lower.

Cubes of berry puree can be added to porridge, milkshake or smoothie, berry sauce or ice cream. You can make compote from frozen berries. Just throw the dogwood into the water with the rest of the fruit without defrosting it. The puree also does not need to be defrosted first, because it easily dissolves in hot porridge, milk and other drinks.
