But how can a store copy compare with a home one? Grown with care, extremely healthy, fragrant and very tasty!

It is no wonder that the goal and dream of many summer residents is to save tender multi-nested berries until late autumn. Is it just possible? And if so, how to store tomatoes at home?

Surprising but true...

Botanically speaking, tomatoes are nothing but berries. But in the 19th century, the U.S. Supreme Court ruled that when collecting customs duties, tomato fruits should be equated with vegetables.

Try to create the best conditions for storing them, so you will at least extend their life as much as possible.

How to keep tomatoes healthy and fresh for a long time

Try to find a secluded dark place in your apartment, the temperature in which always remains stable and is within 10 ° C. The humidity is 80% and the air circulates well.

It can be a basement, a cellar or a room, but by no means a refrigerator. In it, tomatoes will lose their grassy smell, for which they are so loved, and taste.

And here's the thing! The whole taste of tomatoes is given by acids, sugars and special volatile substances. This whole complex is extremely sensitive to ambient temperature. If it turns out to be lower than necessary, fragrant berries will become less fragrant and less tasty.

Recent studies by scientists from France have shown that the optimum temperature at which the production of volatile aromatic substances is enhanced is 20 ° C. It is in such warm conditions that tomatoes are left for full ripening 5 days before consumption.

It also happens that the red berries are already overripe, you don’t want to eat them yet, but it’s a pity to throw them away. In this case, use the following method.

Mix water with salt and 9% vinegar in a ratio of 8x1x1. Place clean tomatoes in a jar or pan and pour over the resulting mixture.

Pour vegetable oil on top so that it covers 1 cm of food.

Wash the tomatoes thoroughly and lay them outside to dry. In the meantime, sterilize the jars and pour 2 tbsp. spoons of mustard powder. Put the tomatoes in a jar, sprinkling a little mustard on each subsequent layer. After filling the jar, pour another spoonful of mustard powder into it, then roll it up with a metal lid. In total, for a 3-liter jar, you should take about 5-6 tbsp. tablespoons of mustard powder.

Thanks to these methods of preservation, tomatoes will remain fresh for about 4-5 months. And remember: whichever method you use, the jars must be removed for storage. in a cool dark place, ideally - cellar or cellar.

First way

It is necessary to select tomatoes without dents and damage. Rinse with cold water and dry on a towel in the shade. In sterile three-liter jars, pour 1 tbsp. a spoonful of mustard powder. Put a few tomatoes upside down from the stalks and sprinkle with mustard again. And so repeat until the jar is full. Should not be stuffed tightly. Each tomato should fit freely, without crushing the neighbor's side. Sprinkle more mustard on top. Close with a dry sterile lid and roll up with a machine. Moisture from the fruit is released almost imperceptibly, but continuously. As a result, mustard powder releases essential substances that prevent the development of putrefactive bacteria.

Just imagine the aroma and taste of real summer tomatoes in winter frosts! Store-bought - you can’t even call them tomatoes. Almost tasteless and completely odorless. Or imported - expensive and it is not known what processed to increase keeping quality.

Mustard is necessary for each jar 3-4 tbsp. spoons. Store in a cool dark place.


Second way

Just as in the first case, it is necessary to select tomatoes without dents and damage. Wash with cold water and dry on a towel.

Third way

Tomatoes here are stored not whole, but passed through a meat grinder.

For 1 kg of tomatoes - 200 g of garlic. We pass everything through a meat grinder or grind it in a blender. Mix, pour into dry sterile small jars (maximum 0.5-0.7 l). Let's settle down. Pour a teaspoon of alcohol on top gently along the edge, set it on fire and immediately, while there is a flame, screw it with a sterile lid.
