Ready-made apple pancakes can be eaten without additives in the form of jam or honey, because they are obtained with a pronounced apple flavor and characteristic sourness.
As for the cost, during apple season it is generally minimal. In my case, I spent about 10-15 rubles on all the ingredients. I count 5 rubles for one serving! I recommend trying it. My child really appreciated this dish.
3 large or medium-sized apples;
2 yolks + 1 egg;
a pinch of salt;
3 tsp coconut oil;
2-3 tbsp. heaped spoons of rice flour (depending on the juiciness of the apples).
I peel the apples, cut them into four parts and cut out the centers. Then I rub them on a coarse grater. For this dish, I always choose sweet apples; if they are sour, they will not be suitable. I don't use any sweetener in this recipe (otherwise the pancakes will stick to the pan), but they are sweet enough if you use the right apples.
I also add the yolks and egg; I throw in salt. I melt coconut oil in the microwave and then pour it into the dough after the apples are already mixed with the eggs; I try not to heat the oil too hot to prevent the eggs from curdling.
I add flour one spoon at a time and stir in it. The dough should turn out “sandy”, not wet. I don’t forget about seasonings: Dr. Oetker vanilla sugar, “Cinnamon with Sugar” from the same manufacturer, or high-quality ground cinnamon are mandatory components of our apple pancakes.
I fry these apple pancakes in a ceramic frying pan without adding oil (especially since coconut oil is already in the dough, however, this is an optional component for the dough) on both sides. It’s time to turn the pancakes over when the raw top part seems to “set” and hardens slightly.
Outwardly, these apple pancakes are not particularly presentable, but very tasty. If the pancakes fall apart, you need to add more eggs and/or flour. Let me draw your attention once again: the dough should not be wet! They hold up better after cooling.
