For me, this is even akin to some kind of mystery: to get up early in the morning, to go around all your possessions - to straighten someone's blanket, to kiss someone on a sniffing nose, and then, quietly closing in the kitchen, make yourself a cup of coffee ... How wonderful it is in silence and tranquility to enjoy every sip - for me these are just priceless minutes when I am devoted exclusively to myself and to no one else ...

And it would be just a crime to deprive yourself of the opportunity to drink this magic for me morning drink with a piece of some delicious pie or cake.

Well, for this you need to be prudent, which I do - I almost always have my family to treat for tea, and to pamper myself from the morning.

Today I will tell you about a pastry that I have recently tried, but already loved by all in our family - a pie with cottage cheese and poppy filling. Despite the large number of all sorts of different manipulations in the process of its preparation, the recipe for this baking is quite simple - especially if you have a favorite assistant at hand - a blender.

Ingredients

To prepare the sand crumbs, which we will use for the base and top of the baking, you need to take:

  • 65 g butter, chilled well
  • 50 g granulated sugar
  • 150 g flour

For the most delicate curd-poppy filling, you should prepare:

  • 370 ml milk
  • 1 egg
  • 0.5 sachet vanillin
  • 100 g granulated sugar
  • 50 g butter
  • 150 g cottage cheese
  • 80 g semolina
  • 80 g dry poppy

How to make poppy seed pie

  1. To begin with, I suggest preparing sand crumbs, which will serve as the bottom and top layers of our baked goods. To do this, you just need to combine flour with sugar, and then diced butter.
  2. You can simply rub it all with your hands, or you can use a blender - the second option, admittedly, is much faster, and even easier ...
  3. The crumb is ready - now we will simply put it in the refrigerator and start preparing the filling.
  4. Poppy filling for pies can be very different. Here it will consist of two parts - curd and milk-manna-poppy.
  5. For the curd component, we simply arm ourselves with a blender again and use it to combine cottage cheese, egg and vanilla sugar.

  6. But for the second component of our original filling, we first pour milk into a small saucepan, add sugar, semolina and butter.
  7. Now we put the pan on the fire and, regularly stirring this milk mass, we control the process of its thickening.

  8. Over time, you need to add washed poppy seeds, mix everything well and keep on fire for another 3-5 minutes.


  9. The mass must be completely cooled.
  10. And then mix it with cottage cheese - our filling is ready.
  11. It's time to turn on the oven to warm up - we need a temperature regime of 180 degrees.
  12. Now let's prepare the shape - we need a small diameter (18-20 cm) with removable walls. It must first be lined with parchment, and then spread over the bottom with an even layer of 2/3 of the sand crumbs from the refrigerator.
  13. Now we spread and level the filling on the crumb base.
  14. And sprinkle it on top with the remaining crumbs.
  15. You can put the future poppy seed pie without yeast in the oven - it should be baked for 45-50 minutes, but in any case, it is better to use a wooden skewer to check the readiness of our baking.
  16. The finished shortbread cake with cottage cheese and poppy seeds must be completely cooled, and only then taken out of the mold and cut into portioned pieces.

Whisk softened butter with sugar and a pinch of salt until a light cream, add the yolks and beat well again. Add flour and stir quickly to make a soft dough. Add 1-2 tbsp if needed. l. cold water or milk.

Place the dough in a 26-28 cm diameter springform pan and smooth the surface with your hands. Refrigerate for 30 minutes.

Prepare the poppy seed filling. Grind poppy seeds in a coffee grinder or grind in a mortar. Peel the apples and grate on a coarse grater. Soak the raisins in warm water for 10 minutes, then put them in a colander and dry.

Divide the eggs into whites and yolks. Whisk the whites until crisp. Mash the yolks with sugar until white. Add poppy seeds, apples, semolina, baking powder and butter, stir well and add raisins. Gently mix the whipped egg whites into the mixture.

Place the pie in the oven and bake for about 1 hour; the curd layer should rise well and brown. Turn off the heat in the oven and open the door slightly, leave the cake in it for another 20 minutes. Then remove the cake from the oven and cool completely. Sprinkle with powdered sugar before serving.

This delicious and satisfying homemade cake is prepared without the use of eggs. Cooking it is very simple and short-lived. Most of the time is spent baking. The cake is medium in height. In a form with a diameter of 24 cm, it turns out to be about 5-6 cm. Let's try?

In a split baking dish, line the bottom with parchment paper. Put 2/3 of the dough into a mold and tamp.

Add cottage cheese mashed with a fork to the finished swollen filling. Stir.

Place the filling over the prepared dough.

Spread the remaining crumb dough evenly over the top.

Put the pie in an oven preheated to 180 degrees. Bake the pie for an hour. You can leave the cake in the oven until it cools completely. Pie with cottage cheese, poppy seeds and semolina is good chilled.
